Baer was a doctoral student of Hermann Otto Laurenz Fischer , whom he followed to Toronto in 1937. They worked together there until 1948. Together they synthesized glyceraldehyde 3-phosphate (also known as Fischer-Baer ester), an important metabolic product. In 1951 he became professor of chemistry at the University of Toronto . In 1969 he retired .

He developed a synthesis route for phospholipids , which started from naturally occurring sugar alcohols , which provided the three-dimensional structure.

In 1964 he received the AOCS Award in Lipid Chemistry from the American Oil Chemists Society.
