Filling dosage
The filling dose (or Tiragelikör ) is a mixture of sugar and yeast dissolved in wine , which is added in the production of sparkling wines to initiate the second fermentation process .
The yeast splits the sugar into alcohol and carbon dioxide . This turns a still wine into a sparkling wine.
According to EU regulation 2332/92, Article 2b, the filling dosage may only consist of the following substances:
- Yeast, as dry yeast or suspended in wine
- Sugar in the form of sucrose
- Grape must concentrate or
- Rectified grape must concentrate (RTK)
