Filling dosage

The filling dose (or Tiragelikör ) is a mixture of sugar and yeast dissolved in wine , which is added in the production of sparkling wines to initiate the second fermentation process .

The yeast splits the sugar into alcohol and carbon dioxide . This turns a still wine into a sparkling wine.

According to EU regulation 2332/92, Article 2b, the filling dosage may only consist of the following substances:

• Yeast, as dry yeast or suspended in wine
• Sugar in the form of sucrose
• Grape must concentrate or
• Rectified grape must concentrate (RTK)
