The Gardian is the mounted bull keeper and cattle herdsman in the south of France . The Gardians are best known for their horses , the Camargue horses . In the Camargue , they perform at events such as the Abrivado and the Ferrade . Their traditional little thatched dwelling is called Cabane de Gardian.

In Provence and neighboring communities, the dish 'Gardianne de taureau' is common (also known as 'Daube des gardians'). It is a goulash made from bull meat (taureau, French bull), which is cooked in good red wine (AOC Corbieres , Costieres de Nimes or Cotes-du-Rhone Gardoises ); often served with rice, which is also grown in the Camargue. The large herds of Camargue bulls are a tourist attraction and their meat is a Provencal specialty.
