The aim of the expert commission is to assess the dangerousness of food additives and to give recommendations for their use. This includes stipulations on the purity of the additives and their maximum permitted daily dose . In addition to collecting information on food additives, it also conducts its own research. The commission has usually met at least once a year since 1956 in different locations. The JEFCA has compiled the more than 2,600 reports from 1956 to 2000 in a database.

The equivalent for the European Union is the Scientific Food Committee , which is subordinate to the EU Council .
