Glenlivet is a whiskey distillery near Ballindalloch , Moray , Scotland . The distillery buildings are classified in category B in the Scottish monument lists.

history

12 year old Glenlivet single malt with can from 1990

The distillery was founded in 1824 as the first legal distillery under the Act of Excise of 1823 by George Smith, which caused the resentment of the entire area as the illegal distilling of whiskey had a long tradition in this area. With the new law, however, the illegal distilleries almost completely disappeared within ten years. The current distillery was built in 1858. In 1880 the Smiths acquired exclusive rights to the name "The Glenlivet". In 1977 the distillery was sold to the American alcohol company Seagram , which went to Pernod Ricard in 2001 . The distillery has a visitor center and tours of the facility are offered on a regular basis.

production

Glenlivet Distillery in the Highlands

The water from the Speyside distillery comes from Josie's Well. The distillery has a mash tun (11.5 t) and eight fermentation vats (together 472,000 l). Distillation takes place in four wash stills (15,000 l each) and four spirit stills (10,500 l each), which are heated by steam. With a new building, another mash tun, six fermentation vats and three stills were added. The art of whiskey production lies, among other things, in choosing the right casks for the time of maturation. American oak barrels are used for The Glenlivet, in which, for example, sherry or bourbon has already been stored and which give the whiskey its own aroma. The still is the heart of whiskey production, and the shape is decisive for the character of the whiskey. The lantern shape designed by founder George Smith is still used today to make this whiskey. The tall stills promote contact between the distillate and copper, remove impurities and allow the aroma elements to mix.

Bottlings

Various grades are sold in Germany: The Glenlivet 12, 15 and 18 year old, the cask strength quality Nàdurra (at least 16 years of maturation) and The Glenlivet Archive 21 year old and the 25 year old XXV as well as the NAS Whiskey Founder's Reserve. Like various other malt whiskeys, The Glenlivet is cold filtered to prevent the whiskey from becoming cloudy when water or ice is added. This does not apply to the specialty Nàdurra, which does not use this process and thus preserves the full malt aroma.
