A Hangiri ( Jap. 飯切 / 半切 , kana はんぎり ) is the Japanese cuisine , a round wooden vat with a flat bottom, which when preparing rice for sushi is used.

Hangiri are traditionally made from cypress wood , which is held together by two copper hoops. The diameter of such a vessel can range from 30 cm for use in the home kitchen to 1 meter in restaurants.

The cook uses hangiri and a wooden mixer ( shamoji ) to shape and cool the rice. After cooking, the rice is poured into the vat and mixed with rice vinegar , sugar and salt . Then the vat is covered with a cloth ( Fukin ) while it cools down .
