Hot lemon

Hot lemon is a hot drink made from water, lemon juice and possibly sugar or honey . Due to its high vitamin C content, it is a popular home remedy for colds . The drink is made with about one lemon per glass and can be sweetened to reduce the high acidity.

Although vitamin C only decomposes at 190 ° C, it oxidizes in aqueous solution to dehydroascorbic acid , which, depending on the reaction conditions, irreversibly hydrolyzes to diketogulonic acid . The oxidation of vitamin C is accelerated by increasing the temperature, which is why the drink is usually prepared at a temperature of around 60 ° C.
