Raspberry spirit

Black Forest raspberry spirit

Raspberry spirit is a fruit spirit .

It is produced by distilling a mixture of neutral alcohol of agricultural origin and fresh, unfermented raspberries . The minimum alcohol content is 40 % by volume . No flavors or colors may be added to the raspberry spirit. A very aromatic raspberry spirit is obtained when using wild raspberries.

Since raspberries produce little alcohol due to their low sugar content of 4.5 to 6.0%, a spirit is usually made from them. The mixture of raspberries and alcohol is macerated for a few weeks so that the taste and scent are transferred to the alcohol. The whole thing is driven off in a fine fire (separation of the solids from the alcohol).
