Izarra (in Basque. For star) is originally from Bayonne originating Basque liqueur , is what produced since 1906. Today the liqueur is made in Angers .

Among German tourists, the Izarra is also known as "the devil from the bottle", in some surfing areas also as the "green wave".

There are three types of Izarra:

  • Izarra Vert: 16 different spices and plants are used. It is drier and stronger in aroma and alcohol than the yellow one (40% vol.).
  • Izarra Jaune: 13 different spices and plants are used. It is lighter and sweeter than the green one, but both types have the same amount of alcohol (40% vol.).
  • Izarra 54: The Izarra 54 has been around since 2012, which aims to reinterpret the original recipe (54% vol.).

history

The yellow and green Izarra were first made in 1835 by the botanist Joseph Grattau , the founder of the distillery.

Manufacturing

The flowers, plants, seeds, rare roots and spices soaked in quality brandy are distilled and result in a very concentrated "spirit", which is then used in small doses for the preparation of the Izarra. The spirit is stirred for 24 hours with old Armagnac , syrup made from refined sugar and white honey. The liqueur then flows through filters into oak barrels, where it is stored for a long time in order to get its velvety softness. It is filtered again before bottling.

consumption

Izarra is drunk in a special way. To do this, fill a shot glass with the liqueur and light it with a lighter. If the liqueur is burning, you quickly put your palm on the glass and extinguish the flame. This creates a vacuum that allows the filled glass to adhere to the palm of the hand. Then you shake the hand on which the glass is hanging, take the glass in the other hand and lift the hand with the glass on it slightly so that a small opening is created. Then you quickly bring your mouth to the opening and first inhale the gases that have formed under the palm of your hand as a result of the burn. Without exhaling one drinks the glass afterwards. Then place the palm of your hand over the glass again, lift it up again and inhale again.

However, this customary way of consuming Izarra is not for untrained drinkers or people who have a problem with strong alcohol.
