Jorge Bombín (* 1978 ) is a Spanish oenologist and cellar master in the 93-hectare Bodega Legaris winery , DO Ribera del Duero . He is a member of the qualifications and appeals committee of the regulatory authority DO Rueda .

After completing the Selectividad in 1994 went to the Advanced Technical School for Agricultural Sciences (Escuela Técnica Superior de Ingenierías Agrarias) in Palencia in the autonomous region of Castile and León . There he obtained the diploma for quality management and agriculture .

In the first eight years of his career, Bombín worked for the Grupo Bodeguero Hijos de Antonio Barceló , initially at Viña Mayor in the province of Valladolid , in 2003 in a winery in the DO Mentrida and from 2004 to 2007 in the Caserio de Dueñas in Rueda . Since 2008 he has been chief oenologist at Bodegas Legaris, part of the Codorníu group .

Wine production in the region of this winery is a particular challenge. The cultivation takes place only in small locations of the three wine-growing communities Moradillo de Roa in the province of Burgos , in Peñafiel 40 km to the west and in Pesquera de Duero , six kilometers to the northwest , both in Valladolid. The Tempranillo, known here as Tinto fino , is used almost exclusively .

According to Bombín's understanding of quality, the terroir must be reflected in the taste of the wines. The plots that have not been cultivated since the phylloxera plague have only been in production since 2015. They are located at 900 meters above sea level and are called Páramos de Legaris ( German  wasteland of Legaris ). These barren vineyards, which are very much shaped by the continental climate, represent a special task in the eyes of Bombín, because nowhere else in this cultivation area is viticulture practiced at these extreme altitudes. His style expresses puristic wines with a subtle wood tone and clear fruit. Its development of wines is determined by the return to the respective terroir and autochthonous grape varieties .

Wines from his house regularly achieve high awards in national and international competitions.
