Kangaroo tail soup

Kangaroo tail soup is a clear, brown soup made from the tails of the kangaroos , but is also made as a thickened soup.

The Australian cuisine , which was strongly influenced by the eating habits of the British and Danish settlers, knows u. a. the preparation of the kangaroo tail soup , which is similar to that of the oxtail soup . Godfrey Charles Mundy, an officer in the British Army and Deputy Adjutant General of the Australian Armed Forces, reported from Sydney in 1851 about a soup made from tails of the wallaby , a smaller species of kangaroo. Kangaroo tail soup is also a delicacy in Germany.

The thin end of the kangaroo tail is used, the kangaroo tails are cut in the joints and fried with root vegetables in oil, then it is extinguished with red wine, filled with stock and slowly cooked. The broth is clarified and degreased several times. The cooked kangaroo tail is cut out, released, degreased, pressed and left to cool. The broth is strained and seasoned with sherry, the cubes of kangaroo tail meat and cooked vegetable cubes are added.
