Kandinat

Kandinat was a common substitute for orange peel and lemon peel in the GDR .

Since citrus fruits could only be imported at great expense, alternatives were developed at the Central Institute for Nutrition in Potsdam-Rehbrücke in order to be able to continue to produce and market baked goods such as Dresden Christmas stollen . Kandinat M , made from boiled and then candied carrots , served as a substitute for orange peel, and Kandinat T was made from candied green tomatoes as a substitute for citronate .
