Cashew juice ( Portuguese suco de caju ) is a fruit juice made from cashew apple (a false fruit , the stalk of cashew nuts). Like the fruit itself, it tastes relatively less intense, a bit like apple and a bit sour.

Since it is easily perishable, it is practically only available in the ( tropical ) countries in which the fruit is grown. It is offered everywhere, especially in Brazilian supermarkets. Outside of these countries, it can only be found in specialty stores as frozen fruit juice concentrate .

Cajuína

In northeastern Brazil in particular, cashew juice is used to make a drink called cajuína, which is said to have medicinal and ritual properties. To do this, cashew juice is first filtered, then gelatine is added. Finally, the tannins are removed from the drink .
