The throats is, especially for herring , a common way of removing the entrails . The abdominal cavity of the fish is not opened in the conventional way by a cut from the anus to the gills . Instead, the bowels are pulled out through the throat. It can happen that parts of the intestines remain in the abdominal cavity. In matjes herring , the pancreas is not only desired, but is essential for the initiation of enzymatic ripening.
