Khoresht also Chorescht , Choresch , or Khoresh ( Persian : خورش) is a Persian generic term for stews in Persian cuisine . The word is a noun of the verb chordan (Persian: خوردن) for "eat" and literally means "meal".

Persian stews are usually served with rice. Plenty of saffron is used for the preparation to achieve a distinctive taste and fragrance. The most famous stews are Khoresht-e Gheimeh, Ghormeh Sabzi and Khoresht-e Fesenjan.
