Kipper is a British smoked fish specialty made from herrings . Large filleted and pre-salted pieces are plated with skin and headless and cold-smoked . They are not always deboned . British kippers are typically not eaten fresh, but fried or heated before consumption. According to food law, the fish may be colored brown with the food coloring E 154 , some smokehouses also use sugar couleur for this .
In the German-speaking world, a herring preparation is known as a “Nordic-style kipper”, which is a hot-smoked kipper without a head.
The kipper are traditionally served with cold fried egg, lemon wedge, olives and pickles for breakfast. They can also be flambéed with whiskey .
