L'Ami du Chambertin is a French soft cheese . It is made from pasteurized cow's milk and comes from the Burgundy region . It has 50 percent fat in the dry matter .

features

The soft cheese L'Ami Du Chambertin has a strong taste and smell, which is why it is also called "stinker". Its crust is wrinkled and red in color. In artisanal production, the milk is thickened in cauldrons and then poured into shape, after which the unripe cheese is dry-salted. It has to mature for four weeks and is washed several times with water mixed with Burgundy spent grains during this time . This soft cheese is traditionally packaged and sold in a chip box .

L'Ami Du Chambertin is served warm with a salad or on a cheese platter and consumed.

history

The cheese was invented by Raymond Gaugry in 1950. The "Fromagerie Gaugry" is a family business.
