Salmon substitute

Salmon substitute is a cold- smoked fish product made from Koehler (trade name “ Pollack ”) or Pacific Pollack (trade name “Alaska Pollack ”), which has an appearance reminiscent of salmon due to its color .

To make salmon substitute, the fish are first filleted, boned and pickled with salt. The fillets are then cut into thin slices, colored red-orange with yellow-orange S and cochineal red A , cold-smoked or smoked with smoke and finally soaked in vegetable oil and brandy vinegar.

Salmon substitutes are available for sale. B. as "pollack fillet block slices" or "pollack slices in vegetable oil". Smaller pieces that arise during production are prepared in the same way as "saithe schnitzel".
