Laghman (food)

Laghman ( Chinese  拉面 , Pinyin lāmiàn , Russian Лагман , Uzbek Лағмон Lagʻmon ) is a Central Asian and Chinese ( Dungan and Uighur ) dish made from meat (mostly lamb ), vegetables and special noodles.

The noodles that give it its name are not cut out of a flat cake, but rather noodles are pulled from a piece of dough. Depending on the method of preparation, Laghman is similar to a soup or a pasta dish.

The recipe differs depending on the region; in northern Afghanistan and Tajikistan , for example, it is made with chickpeas . The dish is known in most of the successor states of the Soviet Union , and it is regarded as a national dish in countries such as Kyrgyzstan and Uzbekistan .
