Leblebi

Leblebi is a specialty from the Çorum province (Turkey), is widespread throughout Turkey and is highly valued as a snack.

Leblebi is a snack from Turkish cuisine made from chickpeas roasted in hot air . In addition to the normal Leblebi without seasoning, there is also Leblebi with salt , hot spices or cloves and sugar. The Leblebi with icing are very popular with children.

The peas are slowly roasted on a specially made sheet metal plate over a gas flame with a flat trowel. They are constantly moved in a circular motion to ensure even roasting and the typical taste. After roasting, the peas turn yellow with black roasted points. They only become crisp after roasting.

The ground powder (leblebi tozu) is not only consumed on its own (mixed with powdered sugar) but is also used in other ways in Turkish cuisine (e.g. in desserts and cakes or for thickening).
