Leipäjuusto ("bread cheese") is a cheese that is traditionally made from the colostrum of the cow, i.e. the milk that it gives directly after a calf is littered. He is from Northern Finland and Kainuu . Leipäjuusto is baked, grilled or flambéed to give it its peculiar brown or charred markings. In Österbotten , Leipäjuusto is called Juustoleipä . Commercially available Leipäjuusto is usually made from conventional milk, which makes it paler and less intense in taste.

Fresh Leipäjuusto is dried in an airy place for a few days. Fresh or dried Leipäjuusto is sometimes placed in a cup and covered with coffee. Mainly, however, Leipäjuusto is eaten with cloudberries or lingonberries, either cold or baked out of the oven. It is often found as a side dish in salads and there are also cake recipes with Leipäjuusto.

The most famous factory for Leipäjuusto is also a highway rest stop (VT 3) near Jalasjärvi , where you can eat and buy all kinds of Leipäjuusto.
