Llajhua

Llajhua

Llajhua is a very hot paste made from Locoto , tomatoes , salt and optional other ingredients that is served with practically all meals in South America , especially in Bolivia . The paste is particularly used in dishes such as roast pork ( Chicharrón de cerdo ) or suckling pig ( Lechón al horno ). A similar sauce is made in northern Chile called pebre . Is produced Llajua traditionally on a grinding stone ( Batan ), but often just in the mixer.

Further ingredients

Depending on the region, onions , Bolivian coriander or other herbs are also used. If the leaves of the wakataya are added, the sauce is called wakataya .
