Ludwig Heiner

Ludwig Valentin Heiner (born October 31, 1883 in Hirm ; †?) Was an Austrian confectioner and owner of the L. Heiner company .

biography

His father was Valentin Heiner, who in 1883 took over the bakery on Vienna's Wollzeile from his father-in-law Andreas Rabl. Valentin Heiner was a royal Bavarian purveyor to the court , his products were awarded prizes at cooking exhibitions in 1884, 1897 and 1898.

He started his apprenticeship with his father, which he successfully completed on August 6, 1901. Heiner went on the roll and wandered to Karlsbad and Dresden . In Karlsbad he got to know the "Carlsbad biscuits", which were considered to be particularly high in calories. In Dresden he learned the recipe for Christmas stollen and took it back to Vienna. After his father, he took over the management of the pastry shop.

He was successful in the industry and not only counted the upper middle class and the aristocracy among his customers, but also supplied coffee houses and restaurants and had the premises of the establishment redesigned.

In 1914, Heiner submitted an application for the title of imperial purveyor to the court . In his application he stated that he employed eight bakers and two pastry assistants , an apprentice, three shop assistants and three house servants at the time. He also stated that the specialties of his house were Munich pretzels , Dresden stollen and Carlsbad rusks . In January 1915 he was finally awarded the title.

The subsequent owner was his wife Berta Heiner, who continued the pastry shop together with her son Prof. Walther Stuller (born 1925 in Vienna).
