May butter

May butter is the butter of cows that go to pasture for the first time in spring. The milk from pasture (and thus the spring butter made from it ) is of significantly better quality and richer in vitamins than the milk that cows produce from silage (silage) and hay .

Butter shows slight color nuances over the course of the year, with May butter as well as “summer butter” in general have a more intense yellow color due to a higher carotene content.

Other meanings

  • In Tyrol and South Tyrol, Maibutter refers to a dish made from half-whipped cream, which is eaten sprinkled with cinnamon and sugar.
  • In legal history, Maibutter also referred to a tax in kind that had to be paid in May.
