Marc Veyrat
Marc Veyrat (born May 8, 1950 in Annecy ) is a French chef who specializes in molecular cuisine and the use of mountain plants and herbs. He is the first of two chefs to be awarded the top mark of 20 out of 20 points by Gault Millau .
Marc Veyrat is known for using roots, mountain plants, mountain herbs and wildflowers that were harvested in the French Alps. His trademark is his black, wide- brimmed hat .
Life
He was the owner of the restaurants La Maison de Marc Veyrat in Veyrier-du-Lac and La Ferme de mon Père in Megève . Today he runs the La Maison des Bois restaurant in Manigod . All three restaurants received three Michelin stars . The restaurant lost its third star in the 2019 Michelin Guide.
In February 2009 he announced that he had to stop his activities at Maison de Marc Veyrat for health reasons. The hotel is continued by his children.
In December 2015, Veyrat was fined € 100,000 by a French court for illegally clearing 7,000 m² of protected forest near one of his restaurants.
In July 2019, Veyrat said he wanted to return his Michelin stars and combined this with a criticism of the restaurant guide as a result of the downgrading of his restaurant to two stars. In September 2019, Veyrat filed a lawsuit against Guide Michelin and asked for the reasons for the downgrade; in December the lawsuit was dismissed on the grounds that the Michelin assessment was covered by freedom of expression.
