Matnakash ( Armenian Մատնաքաշ Matnakash ) is a traditional Armenian bread made from wheat flour. The literal translation of the term means pulled through fingers .

Ingredients and preparation

The dough, based on wheat flour , is made with baker's yeast . Sourdough is the leavening agent . Before baking, the typical oval shape is formed with the fingers.

history

Matnakash was popularized by the Soviet Union in the 1930s . The aim was to establish a “modern bread”, suitable for the “modern age of communism”. The typical shape was reinterpreted according to the Soviet ideology: The typical surface represents a worked field . Matnakash experienced international distribution through the Armenian diaspora .
