Moambé is a spicy sauce made from peanuts and palm oil that is used in stews in Central African cuisine.

Word origin

The word moambé is sometimes derived from the word mwambe , which means eight in Lingala . However, it is more likely that moambé is derived from mwamba palm butter .

Moambé as a national dish

In four countries, chicken with moambé is considered the national dish , namely in the Republic of the Congo as Mwambe or Moambé , in Gabon as Poulet au Nyembwe  or  Poulet au Gnemboue , in western parts of the Democratic Republic of the Congo as Mwambi  or  Mwambe and in Angola as Muamba .
