Mont d'Or (cheese)

Two cheeses trade under the name Mont d'Or . The so-called “ Vacherin Mont-d'Or ” as well as the product with the protected designation of origin “Mont d'Or” or “ Vacherin du Haut-Doubs ”.

Both cheeses are sold in a wooden box, whereby the cheese itself is surrounded by a ring made of spruce wood, which gives off a light woody taste to the cheese during the ripening process. These wooden rings are cut by the Sanglier from the bast of freshly felled spruce and some of them are very artistically decorated. The cheese can only be made between August 15 and March 31, which is why it is only available during this time. The raw milk used is also subject to strict rules. Only milk from cattle of the Montbéliard and Simmental races may be used.
