Mustamakkara ( black sausage ) is a Finnish blood sausage . It is a typical Tampere specialty , where it is sold fresh from food trucks at the port or market . It is traditionally eaten hot with cranberry jam and cold milk.

Mustamakkara consists among other things of pork , pork blood , rye groats , rye flour and onions, which are filled into a natural casing . The three best-known manufacturers are Tapola , Savupojat and Teivon Liha .

There is an old custom in the Tampere region when buying Mustamakkara: instead of the amount, the amount of money available is given, according to which the seller cuts a piece.
