Barley groats

Grits (from Old High German gruzzi for " coarsely ground") is a nutrient made from coarsely chopped grains such as oats , barley , millet , corn , rye or wheat . Also known buckwheat -Grütze. The demarcation to crushed grain is blurred. Grits are mainly used to make porridge or as a soup filler; Baked meal, on the other hand, is used as a ground product in the manufacture of baked goods.

Manufacturing

The grain is cleaned, sorted according to grain size and peeled (if necessary, peeled beforehand - see also peeling mill ). Then the grains are cut up in the "drum groats cutter" (not on a roller mill ). Depending on the setting, fine, medium or coarse grits are created. Then the grits can be freed of any adhering shell parts using a brushing machine. The size of the groats is between that of semolina and pearl barley . Oat groats are made in fine, medium and coarse grain sizes (approximately one, two and three millimeters in size). In oatmeal production, medium-grain grits are processed by rollers into "small leaf flakes " and those with fine grain into "quick-cook flakes ".

Grits are mainly used for soups , porridges and some types of sausage such as grützwurst . To make bulgur , grains of durum wheat are parboiled and then roughly cut with a groats cutter. In a swollen form, it is used in oriental cuisine to make salads, e.g. B. Tabouleh made with mint , parsley and tomatoes .

Fruity desserts such as red grits were originally made with grits as well, but have been refined over time, so that their fruit content has increased in modern recipes and the binding is made with cornstarch or sago instead of grits - all that remains is the name " Groats". The red fruit jelly, which is widespread in East Germany and is made from fruit juice and semolina , corresponds more to the historical preparation.
