Bulgur or bulgur wheat (also Boulghour , Bulghur or Arabic برغل Burghul , DMG burġul ) is a pre-cooked (hydrothermally pretreated) wheat ( parboiled ). After the subsequent drying, the exposed bran is removed mechanically. Then the grain is cut coarsely or finely with a groats cutter .
It is mainly made from durum wheat and is a staple food in Turkey and the Middle East . Bulgur can e.g. B. How rice is cooked with different ingredients (vegetables and / or meat). Similar to couscous in North Africa , it can also be steamed or after soaking without cooking, as a tabboule or as a kısır (bulgur salad) . Bulgur is also an important ingredient in the Çiğ Köfte dish , which is particularly common in southeastern Turkey.
100 grams of unprocessed bulgur contain approximately:
- Dietary fiber : 8 g
- Proteins : 12.5 g
- Carbohydrates : 69 g, of which 0.8 g is sugar
- Fat : 1.75 g, of which 0.2 g saturated fatty acids
and have a calorific value of 1500 kJ (360 kcal).
