bulgur
Bulgur or bulgur wheat (also Boulghour , Bulghur or Arabic برغل Burghul , DMG burġul ) is a pre-cooked (hydrothermally pretreated) wheat ( parboiled ). After the subsequent drying, the exposed bran is removed mechanically. Then the grain is cut coarsely or finely with a groats cutter .
It is mainly made from durum wheat and is a staple food in Turkey and the Middle East . Bulgur can e.g. B. How rice is cooked with different ingredients (vegetables and / or meat). Similar to couscous in North Africa , it can also be steamed or after soaking without cooking, as a tabboule or as a kısır (bulgur salad) . Bulgur is also an important ingredient in the Çiğ Köfte dish , which is particularly common in southeastern Turkey.
