Nidelfladen

Nidelfladen ( common expression in Eastern Switzerland ; in other cantons Nidelwüche , Nidlechueche , in French-speaking Switzerland called Gâteau à la crême ) are a specialty of Swiss cuisine .

Similar to the flan , they are flat, round cakes with little batter. However, these cakes are filled with a mild, sweet and creamy filling made from thick cream , which in Switzerland is called Nidle or Nidel , depending on the region .

There are a number of different Nidelfladen variants. The Bündner Nidelfladen , for example, consists not only of dough and cream, but also of a fruit purée made from dried pear wedges that are perfumed with kirsch and cinnamon. The Nidlechueche from the region around Murten is a regional specialty and, on the other hand, consists of a yeast dough that is baked in several steps. The cake is coated with thin layers of cream or double crème and sugar.
