A pasta chair is a historic, hand-operated device for the production of ribbon noodles , which has been proven in the USA as early as 1850.

With conventional pasta machines , the dough is pressed into shape. The functional principle of the pasta chair is more comparable to the production of snail pasta: the pasta dough is rolled out with a rolling pin and then rolled up. This roll of dough is placed in the noodle chair and transported to the front end of the noodle chair by operating a hand crank on a kind of conveyor belt. There a slice is cut from the dough at regular, adjustable intervals using a knife, which corresponds to a noodle when unrolled.
