Pag cheese ( Croatian Paški sir ) is a sheep cheese specialty that is produced on the island of Pag in Croatia .

This cheese is made from the milk of a small breed of sheep that lives on the island. The special aroma of Paški sir is influenced by several factors: Since only little grass grows on the karst subsoil of the island of Pag, the approx. 28,000 sheep feed mainly on wild and salty herbs .

The cheese gets its special flavor from the four to six months of aging and air-drying. 10 kilograms of cheese can be made from 64 liters of milk.
