Pandanus Essence
Pandanus essence ( Indonesian pandan , Thaiเตยtoey ) is a concentrate that is obtained from the leaves of certain screw tree species and is used as a condiment in Malaysian and Indonesian cuisine .
The essence has a strong as well as tart smell and taste, which is highly valued in Indonesian food culture . It is mainly used for rice-based desserts, but is also occasionally used in simple rice dishes, where the rice aroma is pleasantly enhanced.
Often, pandanus essence is colored intensely green with food coloring.
