Quark dumplings (also: Quarkknödel , Austrian topfennockerl (n) ) are dumplings made from curd cheese or quark dough. There are many different variants that can be classified into the categories of cooked curd dumplings and fried curd dumplings based on the type of preparation .

Cooked curd dumplings

The dough for cooked curd dumplings is prepared with semolina or white bread ( crumb ). Both are responsible for the binding and structure of the dumplings. After cooking, they are rolled in toasted breadcrumbs and then served sprinkled with icing sugar. They are particularly popular in Hungary ( Túrógombóc ), Austria and the Czech Republic , but also in Romania .

Quark dumplings differ from the quark balls common in Germany , which are baked and not cooked, although they also consist of quark dough and are served sprinkled with sugar.

Fried curd dumplings

The fried curd dumplings do not use semolina, but instead use flour and baking powder . They are particularly widespread in Romania, where they are served in many restaurants in the form of a donut with sour cream and fruit as a dessert. Both fried and boiled they are called papanași there .
