The dumpling (plural: the dumplings) or the dumpling (plural: the dumplings) is a dish made from dough that is eaten as a main course, side dish or soup. Dumplings and dumplings actually refer to the same side dishes (in southern Germany mainly the name dumplings). Round shapes are called dumplings, other shapes dumplings. There are different types of dumplings depending on the raw material: Potato dumplings , semolina dumplings , bread dumplings and dumplings , then meatballs and fish dumplings .

Klops is a small dumpling made from minced meat, fish or other ingredients.

General

Dumplings are usually formed into balls from dough of very different compositions depending on the recipe and poached in salted water or steamed over it . In some recipes, they are filled with pieces of toasted bread, fruit, meat or something else. They can be served as a main course, side dish , soup or sweet dessert and are an important part of the Thuringian , Saxon , Bavarian , Austrian and Bohemian cuisine, as well as the cuisine of South Tyrol and Upper Silesia .

etymology

Dumpling

The word Kloß, which is particularly widespread in northern, central and western Germany, comes from the Old High German kloz for "lump, tuber, ball" and is related to "Klotz" and "klotzig". The Low German form is Klüten , in Altmark and in North Friesland Klump .

In Swabia, regional words borrowed Gleeß and Gneedl addition, in the Franconia Kließ and Glües and Gniedla , some of which are known throughout southern Germany and adjacent regions, one of the two main names lump or dumplings.

Dumplings

In southern Germany, Austria and South Tyrol , the name dumpling is common, with dumpling or dumpling being said depending on the region . The late Middle High German word knödel comes from the Old High German chnodo, Middle High German knode ("small hill"). The Czech knedlík , the Italian canederli and the French quenelle are also borrowed from dumplings .

In the Palatinate and its immediate vicinity, the dialectal term Knepp is used alongside Kned (e) l (gnēdəl, gnēdl) .

Klops

Meatballs are also in northern and eastern Germany meatballs called (probably from Swedish: kalops, English: collop for "fried slice of meat"), perhaps part of the phrase pat , the origin is still unclear.

Other variants are made from mixtures of these basic ingredients, e.g. E.g .: Bohemian dumplings , Tyrolean pressed dumplings, Thuringian ash dumplings, Saxon winding dumplings , mushroom dumplings, North German sweet kebabs made from rye flour, Grützwurst or Passatelli , Quenelles in France etc.
