Franconian dumplings

Franconian dumplings are the popular way to prepare dumplings in Franconia . The dough is made from flour , eggs , a little salt , sometimes milk or baking soda and cooked in boiling salted water or soup . There are occasionally variants with equal proportions of flour, potatoes and rolls or semolina .

The dough is very similar to that for the traditional Swabian spaetzle , but is generally a bit more viscous.

Fresh dumplings are served. B. to roast pork , but also as a dessert with canned fruit such. B. Pears .

Leftovers are usually cut into small pieces the following day in a little fat and possibly mixed with eggs (to stretch if there are too few dumplings left, or simply to refine) and served as "dumplings" or "cut dumplings".
