In gastronomy, Thuringian cuisine refers to the cooking tradition from the Thuringian cultural area. The kitchen is considered to be down-to-earth home cooking and is dominated by very meat-based, but also fruity dishes. Their origin is the one in the forest wealth of the country Thuringia , on the other hand through the fertile fruit - and vegetables dominated farming areas in the center of the country. The best known dishes are the Thuringian dumplings made from potatoes, which are considered the national dish of the Thuringians , and the Thuringian Rostbratwurst . Sausage and game specialties also play an important role . Thuringia is the seat of various breweries, such as B. those in Gotha , Altenburg , Apolda and Bad Köstritz .

The kitchen of Thuringia is still a rich and rather heavy cuisine today. This is due to the fact that Thuringia has been characterized by busy agriculture and hard mining and forestry for ages. The meals are correspondingly strong with the use of a lot of meat and rich sauces .

The classic Sunday and festive dinner are Thuringian dumplings with red cabbage , beef roulades and a rich gravy , with a Pilsener or a black beer - depending on your preference . In general, meat still plays a prominent role today, with Thuringian Rostbratwurst and Schmöllner Mutzbraten being particularly popular. The consumption of raw meat as minced meat is also traditionally very high.

cake

Another specialty is the cake. While in the areas of Saxony, Württemberg and the Rhineland, which have long been characterized by bourgeois city life, they have always relied on cakes (French: tarte ) and sweet pastries from France, the simple sheet cake has survived in Thuringia. This tradition continues to this day in regional specialties. In Thuringian bakeries, you can almost exclusively get sheet cakes. In some of the villages, the communal oven is still heated to bake cakes, which are then distributed. For larger occasions such as baptisms, round birthdays and confirmations, a baker is employed . Anyone who does not have at least 10–15 different types of cake is considered stingy. A celebration also includes drinking coffee twice, one in the afternoon as usual, but the other not until after midnight. At this time, the party is cheered up again with cake and strong coffee. In addition, more is baked than is consumed at the celebration itself in order to have enough for the obligatory cake packages for guests, neighbors and friends in town. Cake also plays a role on unpleasant occasions. Funeral parties host coffee drinks with loads of cakes after funerals.
