characterization

Hessian cuisine is very diverse, as each region has its own dishes. The North Hessian cuisine is similar to the Thuringian cuisine , and the influence of the Rhine Hessian and Franconian cuisine can be found in South Hesse . In Central Hesse , too , heavy and equally tasty dishes (home-style cooking ) are often on the menu. Like all regional German cuisines, the Hessian one is also seasonal.

In Frankfurt am Main , as a result of the numerous wealthy guests who flocked to the city during the imperial coronations and trade fairs , a highly developed gastronomy and hotel culture developed as early as the 17th and 18th centuries. In the 19th century, Frankfurt's cuisine was considered to be the best in Germany, alongside Hamburg's and Viennese.

Dishes based on potatoes and bread are very typical for Hessen . Similar to Italian pizza, there are types of bread and yeast cake ( ploatz , bacon cake , onion cake ) that were previously baked when baking bread.
