Haddekuche is a traditional Hessian pastry, a type of diamond-shaped gingerbread , which is or was produced especially in Frankfurt and in cities in Rheinhessen (part of Rhineland-Palatinate ) and southern Hesse . The Hessian word Haddekuche simply means “ hard cake ”. This pastry probably got its name from the fact that it dries relatively quickly and then becomes very hard.

Hadde cakes are diamond-shaped and covered with a diamond pattern, which is reminiscent of the pattern on Frankfurt apple wine glasses, the ribbed ones . The rounded corners of the tapering corners are due to baking technology and also prevent damage during transport. In Frankfurt am Main, they are usually offered by flying pretzel sellers ( Bretzelbubb ) who roam the city's cider bars (today mainly in Sachsenhausen , Heddernheim and Niederursel ).

In Bingen , Haddekuche is still offered according to tradition. It is available all year round in two long-established bakeries there. Instead of the diamond pattern, it is sprinkled with coarse sugar crystals.

The Haddekuche is also still occasionally available in Mainz and Alzey . Haddekuche can be used as a sauce gingerbread , e.g. B. for seasoning sauerbraten.
