Duck fat

Duckefett is a simple sauce and a regional specialty, especially in Kassel , but also in the rest of Northern Hesse . It is made of bacon , onions , sour cream and occasionally condensation or whole milk prepared. As a side dish to duck fat, jacket potatoes and occasionally potato dumplings are usually served.

The name is derived from the dunking - in the North Hessian dialect "ducken" - the side dishes in the sauce, which is very fatty thanks to the bacon and sour cream. Because of its inexpensive ingredients, duck fat has long been considered "poor people's food".
