Frankfurt ribs

Frankfurt ribs are a traditional specialty of Hessian cuisine , but are also eaten in other regions, where they are called ribs or Rippli .

It is cured, cooked pork from the chop strand . This is to be distinguished from Kasseler ribs , for which the meat is cured and additionally smoked . Ribs are usually served warm with sauerkraut and mashed potatoes or bread, but sometimes also cold with mustard with bread, rolls or potato salad.
