Frankfurt Brenten

Frankfurter Brenten are a traditional tea biscuit specialty from Frankfurt am Main that has been known since the Middle Ages.

Brenten are basically made from the same marzipan dough as the Bethmännchen , which are more popular today . However, there are different recipes for Frankfurter Brenten, which differ essentially in that they do not use flour or add it or replace the sugar with honey.

The poem Frankfurter Brenten by Eduard Mörike describes their laborious production. Today, ready-made marzipan is usually used.

In contrast to the Bethmännchen, the dough is shaped into small biscuits in wooden models , often decorated with halved almonds and baked in the oven. Even different motives are formed on the Brenten over the carved model, similar to the established also on model Spekulatius . Brenten are now mainly consumed in the Advent and Christmas season . In Frankfurt am Main, the Brenten are usually only available from a few long-established bakeries and confectioners from around the end of October.
