Spundekäs is a cream cheese preparation that originally comes from northern Rheinhessen . The traditional, elongated conical shape is reminiscent of the bung in the upper area of ​​a wooden barrel from which the name of the cheese is derived.

So-called Spundekäs is now offered nationwide as a ready-made product in supermarkets. Unlike in the original recipe, ready-made products can be based on sour cream and not on cream cheese or quark, for example.

Basic recipe

The base of the Spundekäs consists of two parts of cream cheese and three parts of cream cheese ( quark with a high cream level ), which are mixed together to form a homogeneous mass. It is seasoned with pepper , table salt and the color-giving sweet paprika powder . There are also chopped onions or onions cut into rings , which can be placed on top or next to it.

There are many variations of the basic recipe, so there are recipes with different proportions of ingredients and with additives such as butter , egg yolk , sour cream or crème fraîche . A high proportion of butter is associated with a firmer consistency and, as a result, better malleability. The seasoning also varies. Depending on the recipe, the Spundekäs is also seasoned with garlic , caraway seeds , mustard or capers .

Spundekäs is usually consumed as a snack with salt or pretzels (as a dip ) or strong bread (as a spread). Spundekäs is traditionally consumed with white wine and is therefore served in practically all wine houses and taverns in Rheinhessen and the Rheingau .

Culture

The magazine Unser Rheinhessen has identified Spundekäs as a very special product from the Rheinhessen region : "Fermented between hills, stirred by Alzeyer country women and loved by pretzels ."

The honorary president of the Mombacher Carneval association "Die Bohnebeitel" , Adolf Gottron, erected a memorial to Spundekäs in rhyme form:

“Everyone knows that the eighth glass
