Bee sting
Bienenstich is a traditional sheet cake made from yeast dough with a topping of a fat, sugar and almond mixture that caramelises when baked . It is often filled with vanilla or cream , but also with fat cream. One variant is the bee sting in the shape of a cake. Bienenstich is considered a classic of German cuisine.
According to the guiding principles for fine baked goods of the German Food Book , the portion of the topping must be at least 20% of the weight of the dough; 30% of the surface must consist of oilseeds . Only almonds may be used for almond bee sting. The processing of oil seeds other than walnuts, hazelnuts and almonds must be declared.
Manufacturing
The basis is a sweet yeast dough that is rolled out as thick as a finger on a tray. Then one is before baking Röstmasse boiled sugar or honey, fat, cream and nuts applied (usually planed almonds). The mass is applied relatively hot, otherwise it cannot be spread. The industry offers ready-made granules and masses that are only mixed with almonds and are easy to handle. After baking and cooling, the pastries are divided horizontally. The bee sting is filled with cream , butter cream , fat cream, light vanilla cream or a pudding mixture. A custard cream that is immediately exposed to egg whites after cooking is widely used. Since the mass is very loose, a mold is necessary to fill the bottom. Therefore, the ceiling is divided before application, otherwise it cannot be cut. Since the filling is not completely heated, bee stings are considered susceptible to germs and are therefore used as sample material in food hygiene experiments.
Origin of name
The origin of the name "bee sting" is unclear. The Bäckersjunge forecast for 1474 planned the residents of Linz am Rhein an attack on its neighboring town of Andernach , as the Emperor of Linz to the Rhine toll had withdrawn and awarded to others Achern. On the morning mentioned, however, two Andernach apprentice bakers walked along the city wall and nibbled from the beehives hanging there. When they saw the attackers, they threw the nests at them so that the Linzers - stung by the bees - had to flee. To celebrate, a special cake was baked - the bee sting.

A decision by the Federal Labor Court in 1984 became known as the bee sting case .
