Cream is a component of cakes and pastries.

Composition and manufacture

For cream, egg yolks and sugar are whipped in a water bath and then cooled down. Gelatine is then drawn into the egg mixture before whipped cream is folded in. Cream is often enriched with flavors . Typical examples include fruit flavors, coffee , honey and alcoholic beverages such as rum and red wine .

In cakes, the cream is usually spread between the cake bases and possibly covered with other ingredients such as fruits or nuts. The gelatine makes the cream stiff and gives the cake a certain firmness. Often the cake is covered with cream on the outside. Creamy cream is also used as a filling for small pastries, such as brandy pastries ( cream puffs ) or Danish pastries . Furthermore, cream is often used as a filling for Swiss rolls .
