Saxony-Anhalt cuisine

The Saxony-Anhalt cuisine is the cuisine of the German state Saxony-Anhalt . The areas in the north of the state such as Altmark , Fläming , Anhalt and Magdeburger Börde have similar regional kitchens to neighboring Lower Saxony and Brandenburg . In the Harz , due to the landscape, an independent kitchen with specialties such as Harz cheese and various game specialties developed. The culinary art of the south of the country is based on the cuisine of neighboring Thuringia .

Influences

Saxony-Anhalt has excellent soils for agriculture , especially in the Magdeburger Börde . Therefore, a wide variety of agricultural products is grown here, often sugar beets , but also many types of vegetables . In addition to the dishes with a long tradition, there are various “typical GDR dishes” that have found their way into everyday private kitchen life and, due to their widespread use, are today typical of the region not only for Saxony-Anhalt, but also for the entire former territory of the GDR (see “ Kitchen of the German Democratic Republic ”).

Culinary Saxony-Anhalt

Since 2017, the state of Saxony-Anhalt has been awarding the “Culinary Star” award annually to companies in the agricultural and food industry for high-quality specialties from the region. The winners will be determined as part of the “Culinary Saxony-Anhalt” competition. All companies that have their head office or production facility in Saxony-Anhalt can take part in the competition - from small craft or agricultural businesses with their own processing and direct marketing to companies with industrial production. Approved are products from the first processing stage that are available year-round in consistent quality.

All participating products are tasted and judged by a neutral and independent expert jury. The winners of the competition receive a culinary star and are supported in their marketing activities. Among other things, selected products are put together in the “Culinary Star Box”, which is intended to promote “Enjoyment in Saxony-Anhalt”.

Curiosities

The mite cheese from Würchwitz is a curiosity . In addition, in some regions such as the Altmark, pancakes sprinkled with sugar are eaten with sweet and sour green bean soup ("ditscht"). In the Anhalt region, buckwheat , braised or bratwurst is served with rice pudding .
