Fried pastries

Fried pastries , also deep- fried pastries , are baked goods that are fried in hot fat.

In the past, vegetable oils were rarely used for boiling , instead lard , which is why the term lard biscuits is still in use in the older generations . The pastries consist of yeast dough , fire masses , shortcrust pastries and are widely used internationally in many variations.

Unflavoured unsaturated oils as well as coconut fat and peanut fat are used for frying . Baked in clarified butter is rather rare.

Fillings with jams , jams , plum jam , whipped cream or creams , but also unfilled pastries are common. After baking, fatty baked goods are sugar-coated, apricot-coated and glazed or coated with masses containing chocolate.
