Quarkkäulchen (from the Middle German Kaule "ball") or Quarkkeulchen , known in Vogtland as a baked Klaus or Quarkkliele , are flat, pan-fried dumplings made of quark dough that resemble flat meatballs in shape and size .

preparation

The dough of the Saxon dessert consists of grated jacket potatoes and lean quark , as well as eggs and flour . The ratio of potatoes to quark varies considerably from recipe to recipe (e.g. 3: 1, 7: 5, 4: 3 or even 1: 1), but the following applies: the more flour is replaced by potatoes, the looser it becomes the dough. Flavored dough with is sugar and cinnamon and grated lemon peel or lemon juice. Raisins can be added for refinement , which have previously been optionally placed in brown rum. The dough, which is up to 1 cm thick, is fried in hot fat on both sides until golden brown.

While still warm, sprinkled with cinnamon sugar, the little puddings are served with compote. Usually there is apple sauce , in some regions of Saxony also plum sauce . As a dessert, they are often served with powdered sugar, vanilla ice cream and pureed fruits. They are eaten cold with coffee, tea or cocoa.

Hearty curd cheese

Instead of sugar and raisins, the savory version of the Quarkkäulchen is served with finely chopped “hard sausage” or fried bacon cubes. The dough is seasoned with paprika or pepper.

Similar dishes without potatoes

Quark patties or quark pancakes are made from dough without potatoes: here the quark is mixed with milk and eggs, flour and cornstarch. The dough is seasoned with salt, chopped caraway seeds, chives and a small onion. The golden-brown fried patties are then sprinkled with herbs and served with a green salad. They are also served with steamed fruits to taste sweet.

Quark dumplings are not fried, but left in salted water. The dough of the quark dumplings is mixed with grated bread and semolina, Altenburger quark flatbread with flour, grated bread and cheese.
